These sardines have reached their adult size and are fished in winter by purse seine (near the coast) in the Bay of Biscay. They are larger and less oily than the sardines that are usually found.
The sardines are prepared by hand according to the oldest method which dates back to 1804 (from the time of the "Penn Sardin"): they are first salted then dried for 3 days before being put raw, by hand, in a verrine . They thus retain all their taste. They are not fried, which makes them more digestible.
The organic olive oil comes from a small mill in Navarre, south of Pamplona. It is prepared with Empeltre variety olives.
Sardines, organic extra virgin olive oil, a pinch of salt and that's it!

A 320g jar is equivalent to approximately 3 classic cans. It can be closed and can be kept for 1 month after opening in the refrigerator.
