Its dark color comes from "mucors" also known as “cat hair”. When ‘tommes’ are young, they are arranged laying on straw (formerly on the ground), which gives this particular organic type of taste with a lot of depth. The soft or creamy St Nectaire style is only a marketing trend. We must prefer this farmer texture, semi-firm with a true black rind.
