Bayonne Ham – 100g 12 months old IGP from LOUIS OSPITAL .
Bayonne ham is a cured ham that takes its name from the ancient port city of Bayonne located in south west of France.
With a very strict and traditional method of production, it is the 3rd well known appellation in Europe.
Due to his geographic location, during the drying process, the ham benefiates from the air of the Mountains (Pyrenees mountain chains) and the Atlantic Ocean that confer his very fruity flavours.
Tasting Notes: dryer than a prosciutto, less salty but very fruity, nutty with earthy flavours.

On skewers, alternate fine slices of ham with a few diced melon pieces (another speciality of the South West). For food and wine pairings, we suggest you accompany these skewers with a chilled rosé !
